Classic Egg Salad

Ingredients

  • 8 large eggs
  • ¼ to ⅓ cup mayonnaise
  • 2 Tbsp sweet pickle relish
  • 2 tsp yellow mustard
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 small head Bibb lettuce, leaves separated (optional)

Instructions

  1. Place eggs in a single layer in a large stainless steel saucepan. Add water to cover, and bring to a rolling boil. Remove from heat; let stand, covered, 15 minutes.
  2. Drain and run cold water over eggs; peel and chop.
  3. Combine eggs, desired amount of mayonnaise, pickle relish, mustard, salt, and pepper. Chill until ready to serve.
  4. If desired, spoon egg salad onto lettuce leaves.
