Classic Egg Salad
Ingredients
- 8 large eggs
- ¼ to ⅓ cup mayonnaise
- 2 Tbsp sweet pickle relish
- 2 tsp yellow mustard
- ¼ tsp salt
- ¼ tsp pepper
- 1 small head Bibb lettuce, leaves separated (optional)
Instructions
- Place eggs in a single layer in a large stainless steel saucepan. Add water to cover, and bring to a rolling boil. Remove from heat; let stand, covered, 15 minutes.
- Drain and run cold water over eggs; peel and chop.
- Combine eggs, desired amount of mayonnaise, pickle relish, mustard, salt, and pepper. Chill until ready to serve.
- If desired, spoon egg salad onto lettuce leaves.
