Homemade Chicken Nuggets
Ingredients
- 2 lb boneless, skinless chicken breasts, cut into bite-size pieces
- ¼ cup olive oil
- 1 cup panko breadcrumbs
- 1 Tbsp Italian seasoning
- ¼ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 425°F. Coat a baking sheet with cooking spray.
- Place chicken in a bowl, and add oil. Season lightly with salt and pepper; toss.
- Combine breadcrumbs, Italian seasoning, and cheese in a shallow bowl; mix well.
- Coat chicken in breadcrumbs, pressing gently to adhere. Place on baking sheet. Spray with cooking spray.
- Bake 10 minutes; turn and bake 10 minutes longer or until golden brown and done.
