Homemade Chicken Nuggets

Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into bite-size pieces
  • ¼ cup olive oil
  • 1 cup panko breadcrumbs
  • 1 Tbsp Italian seasoning
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F. Coat a baking sheet with cooking spray.
  2. Place chicken in a bowl, and add oil. Season lightly with salt and pepper; toss.
  3. Combine breadcrumbs, Italian seasoning, and cheese in a shallow bowl; mix well.
  4. Coat chicken in breadcrumbs, pressing gently to adhere. Place on baking sheet. Spray with cooking spray.
  5. Bake 10 minutes; turn and bake 10 minutes longer or until golden brown and done.
