Vegetable Pot Sticker Soup
Ingredients
- 3 (8-oz) pkg frozen vegetable pot stickers
- 2 cups vegetable broth
- 1 (13.6-oz) can light coconut milk
- 1½ cups water
- 1 (¾-lb) pkg sugar snap peas, trimmed and cut into lengthwise strips
- ¼ cup chopped green onions
Instructions
- Place pot stickers in a microwavable bowl; set aside 1 dipping sauce packet for soup, and reserve remaining packets for another use.
- Microwave pot stickers at HIGH 5 minutes or until tender.
- Combine soy dipping sauce, broth, coconut milk, and water in a large Dutch oven; bring to a boil. Cover; reduce heat and simmer 5 minutes. Add pot stickers and sugar snap peas; cook 1 to 2 minutes or until thoroughly heated.
- Ladle into bowls, and sprinkle with onions.
