Chicken Tortilla Boats

Ingredients

  • 6 soft flour tortilla bowls (such as Old el Paso)
  • 1 (11-oz) pkg frozen honey roasted sweet corn, thawed (such as Green Giant)
  • 1 deli rotisserie chicken, shredded (Note)
  • 1 (8-oz) pkg shredded lettuce
  • 1 (8-oz) block Cheddar cheese, shredded
  • 2 avocados, chopped

Instructions

  1. Heat tortilla bowls according to package directions.
  2. Cook corn according to package directions. If desired, sear in a skillet over high heat; season lightly with salt and pepper.
  3. Heat chicken in microwave.
  4. Fill tortilla bowls with lettuce, chicken, corn, cheese, and avocado. Serve with desired toppings such as salsa, ketchup, or mild white cheese dip.

Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable Spanish-style rice
  • 1 small red bell pepper, chopped
  • 2 Tbsp olive oil
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Toss together rice and remaining ingredients. Season lightly with salt and pepper.
