Chicken Tortilla Boats
Rice and Red Bell PepperIngredients
- 6 soft flour tortilla bowls (such as Old el Paso)
- 1 (11-oz) pkg frozen honey roasted sweet corn, thawed (such as Green Giant)
- 1 deli rotisserie chicken, shredded (Note)
- 1 (8-oz) pkg shredded lettuce
- 1 (8-oz) block Cheddar cheese, shredded
- 2 avocados, chopped
Instructions
- Heat tortilla bowls according to package directions.
- Cook corn according to package directions. If desired, sear in a skillet over high heat; season lightly with salt and pepper.
- Heat chicken in microwave.
- Fill tortilla bowls with lettuce, chicken, corn, cheese, and avocado. Serve with desired toppings such as salsa, ketchup, or mild white cheese dip.
Side Dish Ingredients
- 1 (8.8-oz) pouch microwavable Spanish-style rice
- 1 small red bell pepper, chopped
- 2 Tbsp olive oil
- 1 Tbsp lime juice
Side Dish Instructions
- Cook rice according to package directions.
- Toss together rice and remaining ingredients. Season lightly with salt and pepper.
