Mediterranean Couscous and Flank Steak

Ingredients

  • 1 lemon
  • ½ seedless cucumber, halved lengthwise
  • ½ lb flank steak
  • 1 Tbsp olive oil
  • ½ (10-oz) pkg couscous
  • 1 cup multicolored cherry tomatoes, halved
  • 1 Tbsp chopped fresh basil
  • 1 Tbsp chopped fresh parsley
  • ¼ cup crumbled feta cheese

Instructions

  1. Zest and juice lemon. Thinly slice cucumber.
  2. Lightly season steak with salt and pepper. Cook steak in hot oil in a cast-iron skillet over medium-high heat 6 minutes per side or to desired doneness.
  3. Let stand 5 minutes before thinly slicing across the grain.
  4. Meanwhile, cook couscous according to package directions; fluff with a fork, and spoon into a large bowl.
  5. Stir in lemon zest, lemon juice, tomatoes, cucumber, basil, and parsley; season with salt and pepper to taste.
  6. Serve couscous with steak; sprinkle with cheese.
