Mediterranean Couscous and Flank Steak

Ingredients
- 1 lemon
- ½ seedless cucumber, halved lengthwise
- ½ lb flank steak
- 1 Tbsp olive oil
- ½ (10-oz) pkg couscous
- 1 cup multicolored cherry tomatoes, halved
- 1 Tbsp chopped fresh basil
- 1 Tbsp chopped fresh parsley
- ¼ cup crumbled feta cheese
Instructions
- Zest and juice lemon. Thinly slice cucumber.
- Lightly season steak with salt and pepper. Cook steak in hot oil in a cast-iron skillet over medium-high heat 6 minutes per side or to desired doneness.
- Let stand 5 minutes before thinly slicing across the grain.
- Meanwhile, cook couscous according to package directions; fluff with a fork, and spoon into a large bowl.
- Stir in lemon zest, lemon juice, tomatoes, cucumber, basil, and parsley; season with salt and pepper to taste.
- Serve couscous with steak; sprinkle with cheese.
