Flank Steak Tacos

Ingredients

  • ½ lb flank steak
  • ¼ tsp ground chipotle chile pepper
  • ½ tsp salt, divided
  • 1 mango, peeled and chopped
  • 2 Tbsp finely chopped red onion
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime juice
  • 2 tsp olive oil
  • 4 corn tortillas, heated
  • 1 avocado, sliced
  • Lime wedges (optional)

Instructions

  1. Heat an oiled grill pan over medium-high heat; sprinkle steak with chipotle chile pepper and ¼ tsp salt.
  2. Grill steak 5 to 6 minutes per side or to desired doneness; let stand 15 minutes before thinly slicing across the grain.
  3. Meanwhile, stir together mango, onion, cilantro, lime juice, oil, and ¼ tsp salt.
  4. Divide steak and mango salsa among tortillas; top with avocado, and, if desired, serve with lime wedges.

  • 1 organic bell pepper (any color), thinly sliced
  • ½ onion, sliced
  • ½ tsp ground cumin
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Sauté bell pepper, onion, cumin, salt, and pepper in hot oil in a large skillet over medium-high heat 6 minutes or until tender.
