Flank Steak Tacos
Sautéed Pepper and Onion
Ingredients
- ½ lb flank steak
- ¼ tsp ground chipotle chile pepper
- ½ tsp salt, divided
- 1 mango, peeled and chopped
- 2 Tbsp finely chopped red onion
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp lime juice
- 2 tsp olive oil
- 4 corn tortillas, heated
- 1 avocado, sliced
- Lime wedges (optional)
Instructions
- Heat an oiled grill pan over medium-high heat; sprinkle steak with chipotle chile pepper and ¼ tsp salt.
- Grill steak 5 to 6 minutes per side or to desired doneness; let stand 15 minutes before thinly slicing across the grain.
- Meanwhile, stir together mango, onion, cilantro, lime juice, oil, and ¼ tsp salt.
- Divide steak and mango salsa among tortillas; top with avocado, and, if desired, serve with lime wedges.

- 1 organic bell pepper (any color), thinly sliced
- ½ onion, sliced
- ½ tsp ground cumin
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp olive oil
Side Dish Instructions
- Sauté bell pepper, onion, cumin, salt, and pepper in hot oil in a large skillet over medium-high heat 6 minutes or until tender.
