Sage Pork Chops
Balsamic Greens with Sautéed Pear
Ingredients
- 2 pork loin chops
- 2 tsp olive oil
- ½ tsp dry rubbed sage
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Rub pork chops with oil; sprinkle with sage and season with salt and pepper.
- Cook pork in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until pork chops are done.
Side Dish Ingredients
- 1 pear, peeled, cored and sliced
- 2 tsp olive oil
- 1 tsp water
- 1 Tbsp balsamic vinegar, divided
- 1 clove garlic, minced
- ¾ lb turnip or collard greens, trimmed and coarsely chopped
- 2 Tbsp low-sodium chicken broth
- ¼ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Sauté pear in hot oil in a Dutch oven over medium-high heat 5 minutes or until pear begins to brown; add water and 1 tsp vinegar.
- Cook 2 minutes or until pear is tender; remove and keep warm.
- Add garlic and greens to Dutch oven; cook 5 minutes or until greens begin to wilt.
- Add broth, 2 tsp vinegar, salt, and pepper; cook 5 minutes or until greens are tender.
