Sage Pork Chops

Balsamic Greens with Sautéed Pear

Ingredients

  • 2 pork loin chops
  • 2 tsp olive oil
  • ½ tsp dry rubbed sage
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Rub pork chops with oil; sprinkle with sage and season with salt and pepper.
  2. Cook pork in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until pork chops are done.

Side Dish Ingredients

  • 1 pear, peeled, cored and sliced
  • 2 tsp olive oil
  • 1 tsp water
  • 1 Tbsp balsamic vinegar, divided
  • 1 clove garlic, minced
  • ¾ lb turnip or collard greens, trimmed and coarsely chopped
  • 2 Tbsp low-sodium chicken broth
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Sauté pear in hot oil in a Dutch oven over medium-high heat 5 minutes or until pear begins to brown; add water and 1 tsp vinegar.
  2. Cook 2 minutes or until pear is tender; remove and keep warm.
  3. Add garlic and greens to Dutch oven; cook 5 minutes or until greens begin to wilt.
  4. Add broth, 2 tsp vinegar, salt, and pepper; cook 5 minutes or until greens are tender.
