Mini Gouda Meat Loaves

Ingredients

  • ½ cup frozen seasoning blend (diced onion, bell peppers, and celery)
  • 1 Tbsp minced garlic
  • ⅓ cup panko breadcrumbs (preferably whole wheat)
  • 1 Tbsp Worcestershire sauce
  • ½ Tbsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 large egg, lightly beaten
  • ¾ lb lean ground beef
  • 3 (0.7-oz) slices Gouda cheese

Instructions

  1. Preheat oven to 450°F. Microwave seasoning blend in a bowl at HIGH 1 to 2 minutes or until tender. Stir in garlic, breadcrumbs, Worcestershire, mustard, salt, pepper, and egg; add beef, and gently mix together using your hands.
  2. Shape mixture into 3 small meat loaves. Place on a wire rack on a foil-lined rimmed baking sheet.
  3. Bake 15 minutes; top with cheese, tearing slices as needed, and bake 5 minutes longer or until no longer pink in centers.

  • 1 (12-oz) pkg green beans
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • ¼ tsp kosher salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet. Bake 12 minutes or until vegetables are browned and tender.
