Roasted Orange-Thyme Salmon

Ingredients

  • 4 cloves garlic, pressed
  • 1 Tbsp fresh thyme leaves
  • 1 Tbsp fresh orange juice
  • 1 Tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 1 (1½-lb) salmon fillet
  • 2 oranges, sliced

Instructions

  1. Preheat oven to 450°F. Combine garlic, thyme, orange juice, oil, salt, and pepper in a small bowl.
  2. Rub mixture over fish, and place fish on a parchment paper-lined rimmed baking sheet; top with oranges.
  3. Bake 12 to 15 minutes or until fish flakes with a fork.

  • 2 lb asparagus, trimmed 
  • 1½ cups orzo
  • 1 Tbsp olive oil
  • 1 small clove garlic, minced
  • ½ tsp salt
  • ½ tsp pepper 

Side Dish Instructions

  1. Cut asparagus into 3-inch pieces.
  2. Cook orzo according to package directions, adding asparagus during last 2 minutes of cooking.
  3. Drain orzo, and place in a bowl. Add oil, garlic, salt, and pepper; toss.
