Lettuce Wraps with Salmon Salad

Ingredients

  • ⅓ cup avocado-oil mayonnaise (or use a homemade Paleo Mayonnaise)
  • 1 Tbsp (or more) chopped fresh dill
  • 1 Tbsp fresh lemon juice
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 3 (6-oz) cans wild-caught salmon, drained and flaked
  • 8 romaine lettuce leaves
  • 2 tomatoes, sliced
  • ½ cup thinly sliced radishes

Instructions

  1. Combine mayonnaise, dill, lemon juice, salt, and pepper in a large bowl; gently stir in salmon.
  2. Arrange lettuce in stacks of 2 leaves each; fill with sliced tomatoes, salmon salad, and radishes. Fold up lettuce like a taco.

Side Dish Ingredients

  • 1 (16-oz) pkg strawberries, halved
  • 1 (4.4-oz) pkg blueberries
  • 2 tsp fresh lemon juice
  • 2 tsp raw honey

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
