Lettuce Wraps with Salmon Salad
Berry TossIngredients
- ⅓ cup avocado-oil mayonnaise (or use a homemade Paleo Mayonnaise)
- 1 Tbsp (or more) chopped fresh dill
- 1 Tbsp fresh lemon juice
- ¼ tsp kosher salt
- ¼ tsp pepper
- 3 (6-oz) cans wild-caught salmon, drained and flaked
- 8 romaine lettuce leaves
- 2 tomatoes, sliced
- ½ cup thinly sliced radishes
Instructions
- Combine mayonnaise, dill, lemon juice, salt, and pepper in a large bowl; gently stir in salmon.
- Arrange lettuce in stacks of 2 leaves each; fill with sliced tomatoes, salmon salad, and radishes. Fold up lettuce like a taco.
Side Dish Ingredients
- 1 (16-oz) pkg strawberries, halved
- 1 (4.4-oz) pkg blueberries
- 2 tsp fresh lemon juice
- 2 tsp raw honey

- Toss together all ingredients in a bowl.
