Maple-Glazed Salmon

Broccoli Spears and Wheat Rolls

Ingredients

  • 3 Tbsp pure maple syrup
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp Dijon mustard
  • ¾ tsp pepper
  • 6 (4-oz) salmon fillets

Instructions

  1. Preheat broiler. Combine syrup, soy sauce, mustard and pepper in a small bowl.
  2. Place salmon, skin side down, on a broiler pan coated with cooking spray. Lightly brush soy mixture over salmon fillets.
  3. Broil 8 to 10 minutes or until fish flakes with a fork, basting twice with soy mixture.

Side Dish Ingredients

  • 1½ lb head broccoli, trimmed and cut into spears
  • 3 Tbsp light butter with canola oil
  • 1½ tsp Dijon mustard
  • ⅛ tsp salt
  • 6 whole wheat dinner rolls with honey

Side Dish Instructions

  1. Arrange broccoli in a steamer basket over boiling water; cover and steam 5 to 7 minutes or until crisp-tender. Place on serving platter.
  2. Whisk together the light butter and mustard and spoon over the broccoli; sprinkle with salt.
  3. Serve broccoli and rolls alongside salmon.
