Maple-Glazed Salmon
Broccoli Spears and Wheat Rolls
Ingredients
- 3 Tbsp pure maple syrup
- 2 Tbsp low-sodium soy sauce
- 2 Tbsp Dijon mustard
- ¾ tsp pepper
- 6 (4-oz) salmon fillets
Instructions
- Preheat broiler. Combine syrup, soy sauce, mustard and pepper in a small bowl.
- Place salmon, skin side down, on a broiler pan coated with cooking spray. Lightly brush soy mixture over salmon fillets.
- Broil 8 to 10 minutes or until fish flakes with a fork, basting twice with soy mixture.
Side Dish Ingredients
- 1½ lb head broccoli, trimmed and cut into spears
- 3 Tbsp light butter with canola oil
- 1½ tsp Dijon mustard
- ⅛ tsp salt
- 6 whole wheat dinner rolls with honey
Side Dish Instructions
- Arrange broccoli in a steamer basket over boiling water; cover and steam 5 to 7 minutes or until crisp-tender. Place on serving platter.
- Whisk together the light butter and mustard and spoon over the broccoli; sprinkle with salt.
- Serve broccoli and rolls alongside salmon.
