Tortellini with Sausage, Spinach and Mushrooms

Ingredients
- 1 (9-oz) pkg refrigerated whole wheat three-cheese tortellini
- 2 (3-oz) mild Italian chicken sausage links, sliced
- 1 clove garlic, minced
- 1 cup sliced baby portobello mushrooms
- 2 cups baby spinach
- 2 Tbsp chopped walnuts
- 2 Tbsp freshly grated Parmesan cheese
- ⅛ tsp pepper
Instructions
- Cook tortellini according to package directions; drain, reserving ¼ cup pasta water.
- Meanwhile, cook sausage, garlic and mushrooms in a nonstick skillet over medium heat 8 minutes or until sausage is browned. Add spinach; cook 2 minutes or until wilted.
- Stir in tortellini and reserved pasta water. Sprinkle with walnuts, cheese and pepper.
