Ingredients

  • 2 eggs
  • ¼ cup and 1 tsp mayonnaise
  • 2 Tbsp lemon juice
  • ⅛ tsp red pepper flakes
  • 1½ tsp dried tarragon
  • 1½ Tbsp minced green onions
  • ¾ lb crabmeat
  • ¾ cup crushed buttery round crackers
  • 1 Tbsp and 1½ tsp butter

Instructions

  1. In a medium bowl, whisk together eggs, mayonnaise, lemon juice, red pepper flakes, tarragon, and scallions. Gently stir in crabmeat, being careful not to break up meat. Gradually mix in cracker crumbs, adding until desired consistency is achieved.
  2. Heat butter in a skillet over medium heat. Form crab mixture into 4 patties. Place patties in skillet, and cook until golden brown, about 5 to 6 minutes on each side.

Side Dish Ingredients

  • 1¼ lb broccoli
  • 1 Tbsp and 1½ tsp olive oil
  • Salt and ground black pepper to taste

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Cut broccoli florets from the stalk. Peel the stalk and slice into ¼-inch slices. Mix florets and stem pieces with olive oil in a bowl and transfer to a baking sheet; season with salt and pepper.
  3. Roast in the preheated oven until broccoli is tender and lightly browned, about 18 minutes.
