Walnut-Fig Breakfast Bars
Ingredients
- 1 cup raw walnut halves
- ⅓ cup shelled raw pepitas (pumpkin seeds)
- ¼ cup raw sunflower kernels
- 3 Tbsp chia seeds
- ½ cup chopped dried figs
- 2 Tbsp warm water
- 2 Tbsp pure maple syrup
- 1 large egg white
- ¾ tsp kosher salt
- 2 tsp coconut oil
Instructions
- Preheat oven to 350°F. Spread nuts, pepitas, and sunflower seeds on a rimmed baking sheet. Bake 15 to 20 minutes or until golden and fragrant, stirring occasionally.
- Process nut mixture in a small food processor until coarsely chopped; transfer to a large bowl, and stir in chia seeds.
- Process ¼ cup chopped figs, water, maple syrup, egg white, and salt until smooth in food processor, scraping sides as needed. Add fig mixture and ¼ cup chopped figs to nut mixture; stir until blended.
- Grease an 8-inch square pan with oil; spread nut-fig mixture into pan, pressing firmly in an even layer.
- Bake 20 to 25 minutes or until golden brown; cool 15 minutes. Cut into bars.
