Walnut-Fig Breakfast Bars

Ingredients

  • 1 cup raw walnut halves
  • ⅓ cup shelled raw pepitas (pumpkin seeds)
  • ¼ cup raw sunflower kernels
  • 3 Tbsp chia seeds
  • ½ cup chopped dried figs
  • 2 Tbsp warm water
  • 2 Tbsp pure maple syrup
  • 1 large egg white
  • ¾ tsp kosher salt
  • 2 tsp coconut oil

Instructions

  1. Preheat oven to 350°F. Spread nuts, pepitas, and sunflower seeds on a rimmed baking sheet. Bake 15 to 20 minutes or until golden and fragrant, stirring occasionally.
  2. Process nut mixture in a small food processor until coarsely chopped; transfer to a large bowl, and stir in chia seeds.
  3. Process ¼ cup chopped figs, water, maple syrup, egg white, and salt until smooth in food processor, scraping sides as needed. Add fig mixture and ¼ cup chopped figs to nut mixture; stir until blended.
  4. Grease an 8-inch square pan with oil; spread nut-fig mixture into pan, pressing firmly in an even layer.
  5. Bake 20 to 25 minutes or until golden brown; cool 15 minutes. Cut into bars.
