Beef Taco Bowls

Ingredients
- ½ cup shelled raw pepitas (pumpkin seeds)
- 1½ lb grass-fed ground beef
- 2 tsp chili powder
- 2 tsp ground cumin
- ½ tsp salt
- ½ tsp pepper
- ¼ cup chopped fresh cilantro
- 3 Tbsp water
- 4 cups shredded romaine lettuce
- 1 cup fresh salsa
- 2 avocados, diced
Instructions
- Toast pepitas in a dry skillet over medium-high heat 2 to 3 minutes or until fragrant, stirring often.
- Cook beef, chili powder, cumin, salt, and pepper in a large nonstick skillet over medium heat 8 minutes or until beef is browned and crumbly. Stir in cilantro and water.
- Serve seasoned beef mixture over shredded lettuce in bowls. Top with salsa, avocado, and pepitas.
