Ground Beef-Chorizo Burgers
Warm Sweet Potato SaladIngredients
- 1¼ lb grass-fed ground beef
- ½ lb ground chorizo sausage (or more grass-fed ground beef)
- 1 onion, minced
- 4 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 6 thick tomato slices
- 6 leaves curly leaf lettuce (or use Bibb lettuce)
- Small dill pickles (optional; such as Bubbies)
Instructions
- Preheat grill to medium-high heat. Combine beef, chorizo, onion, garlic, salt, and pepper in a bowl. Mix just until blended. Shape into 6 patties.
- Grill patties on a grill rack rubbed with avocado oil, covered, 5 minutes per side or until centers are no longer pink.
- Arrange tomatoes, lettuce, and patties in 6 stacks; garnish with pickles, if desired. Serve with knives and forks.
Side Dish Ingredients
- 2 lb sweet potatoes, peeled and cut into 1-inch pieces
- 1 tsp salt
- ¼ cup extra virgin olive oil
- 1½ Tbsp white wine vinegar
- 1 Tbsp Dijon mustard
- ¼ cup chopped fresh parsley
- 2 cloves garlic, minced
Side Dish Instructions
- Bring potatoes, salt, and water to cover to a boil in a large saucepan. Cook 18 minutes or until tender. Drain and transfer potatoes to a large bowl.
- Combine oil, vinegar, mustard, parsley, and garlic; drizzle over potatoes. Toss; season with salt and pepper to taste.
