Citrus Chicken

Garlic and Pecan Green Beans

Ingredients

  • 1 orange
  • 1 lemon
  • 1 lime
  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 (6-oz) boneless, skinless chicken breast, halved 
  • ¼ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Grate zest from orange, lemon, and lime into a bowl; squeeze juice from orange, and add to bowl.
  2. Add oil, garlic, and chicken; chill at least 30 minutes.
  3. Heat a grill pan or cast-iron skillet over medium-high heat. Remove chicken from marinade; discard marinade.
  4. Sprinkle chicken with salt and pepper; cook 6 minutes per side or until done.

  • ½ lb green beans, trimmed
  • 2 Tbsp chopped pecans
  • 1 clove garlic, minced
  • 1 Tbsp butter
  • ¼ tsp salt

Side Dish Instructions

  1. Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
  2. Cook nuts and garlic in butter in a small skillet over medium heat until fragrant.
  3. Place green beans in a bowl; toss with salt, and sprinkle with nuts.
