Citrus Chicken
Garlic and Pecan Green BeansIngredients
- 1 orange
- 1 lemon
- 1 lime
- 2 Tbsp olive oil
- 1 clove garlic, minced
- 1 (6-oz) boneless, skinless chicken breast, halved
- ¼ tsp salt
- ⅛ tsp pepper
Instructions
- Grate zest from orange, lemon, and lime into a bowl; squeeze juice from orange, and add to bowl.
- Add oil, garlic, and chicken; chill at least 30 minutes.
- Heat a grill pan or cast-iron skillet over medium-high heat. Remove chicken from marinade; discard marinade.
- Sprinkle chicken with salt and pepper; cook 6 minutes per side or until done.

- ½ lb green beans, trimmed
- 2 Tbsp chopped pecans
- 1 clove garlic, minced
- 1 Tbsp butter
- ¼ tsp salt
Side Dish Instructions
- Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
- Cook nuts and garlic in butter in a small skillet over medium heat until fragrant.
- Place green beans in a bowl; toss with salt, and sprinkle with nuts.
