Tex-Mex Turkey Soup
Cilantro RiceIngredients
- ½ lb lean ground turkey
- 1 (32-oz) carton low-sodium chicken broth
- ½ (15.5-oz) jar salsa
- ½ small head green cabbage, chopped
- 1 zucchini, cut into half-moons
- ½ cup chopped onion
- 1 jalapeño pepper, seeded and minced
- ½ Tbsp ground cumin
Instructions
- Cook turkey in a Dutch oven over medium heat until browned and crumbly. Add remaining ingredients; bring to a boil over medium-high heat, reduce heat, and simmer 20 minutes.
- Serve over Cilantro Rice recipe, if desired.

- ½ cup long-grain white rice
- 2 Tbsp chopped fresh cilantro
- ⅛ tsp salt
Side Dish Instructions
- Cook rice according to package directions. Stir in cilantro and salt.
