Tex-Mex Turkey Soup

Ingredients

  • ½ lb lean ground turkey
  • 1 (32-oz) carton low-sodium chicken broth
  • ½ (15.5-oz) jar salsa
  • ½ small head green cabbage, chopped
  • 1 zucchini, cut into half-moons
  • ½ cup chopped onion
  • 1 jalapeño pepper, seeded and minced
  • ½ Tbsp ground cumin

Instructions

  1. Cook turkey in a Dutch oven over medium heat until browned and crumbly. Add remaining ingredients; bring to a boil over medium-high heat, reduce heat, and simmer 20 minutes.
  2. Serve over Cilantro Rice recipe, if desired.

  • ½ cup long-grain white rice
  • 2 Tbsp chopped fresh cilantro
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook rice according to package directions. Stir in cilantro and salt.
