Sheet Pan Creole Shrimp and Sausage
Mixed Greens with Lemon VinaigretteIngredients
- ½ small onion, thinly sliced
- ½ small red bell pepper, cut into strips
- ½ small yellow bell pepper, cut into strips
- ½ (14-oz) pkg kielbasa sausage, sliced
- 2 Tbsp olive oil, divided
- ½ Tbsp Creole seasoning, divided
- ½ lb peeled and deveined, large raw shrimp
- 1 cup grape tomatoes, cut in half
- Dash of salt
- 2 Tbsp chopped fresh parsley
Instructions
- Preheat oven 425°F. Toss together onion, bell peppers, kielbasa, 1 Tbsp oil, and 1 tsp seasoning on a large rimmed baking sheet; spread in a single layer.
- Bake 8 minutes. Meanwhile, combine shrimp, tomatoes, 1 Tbsp oil, ½ tsp seasoning, and salt.
- Stir shrimp mixture into bell pepper mixture. Bake 8 to 10 minutes or until shrimp turn pink. Season with pepper to taste. Sprinkle with parsley.

- 1½ Tbsp extra virgin olive oil
- ½ Tbsp fresh lemon juice
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (5-oz) pkg mixed baby greens
Side Dish Instructions
- Whisk together oil, lemon juice, salt, and pepper in a bowl; add mixed greens, and toss.
