Chicken with Orange-Avocado Relish

Ingredients

  • 1 lb boneless, skinless chicken breasts, halved lengthwise
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil, divided
  • 1 avocado, chopped
  • 1 Tbsp fresh lemon juice
  • 1 tsp honey
  • 1 orange, sectioned and chopped
  • 1 Tbsp chopped fresh basil

Instructions

  1. Sprinkle chicken with salt and pepper. Cook in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet.
  2. Toss avocado with lemon juice; stir in 1 Tbsp oil, honey, and orange. Sprinkle with basil. Serve over chicken.

  • 1 (12-oz) pkg broccoli florets
  • 1 red bell pepper, cut into strips
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • ¼ cup water
  • 1½ tsp sesame seeds
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Sauté broccoli, bell pepper, and garlic in hot oil in a large skillet over medium heat 2 minutes. Add water; cover and steam 5 minutes or until crisp-tender.
  2. Uncover and stir in sesame seeds, salt, and pepper. Cook 2 minutes or until liquid has evaporated.
