Chicken with Orange-Avocado Relish
Sesame Broccoli and Red PeppersIngredients
- 1 lb boneless, skinless chicken breasts, halved lengthwise
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil, divided
- 1 avocado, chopped
- 1 Tbsp fresh lemon juice
- 1 tsp honey
- 1 orange, sectioned and chopped
- 1 Tbsp chopped fresh basil
Instructions
- Sprinkle chicken with salt and pepper. Cook in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet.
- Toss avocado with lemon juice; stir in 1 Tbsp oil, honey, and orange. Sprinkle with basil. Serve over chicken.

- 1 (12-oz) pkg broccoli florets
- 1 red bell pepper, cut into strips
- 1 clove garlic, minced
- 1 Tbsp olive oil
- ¼ cup water
- 1½ tsp sesame seeds
- ¼ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Sauté broccoli, bell pepper, and garlic in hot oil in a large skillet over medium heat 2 minutes. Add water; cover and steam 5 minutes or until crisp-tender.
- Uncover and stir in sesame seeds, salt, and pepper. Cook 2 minutes or until liquid has evaporated.
