Tuscan Tuna Salad
Ingredients
- 2 large eggs
- 1 (12-oz) can albacore tuna in oil, drained and flaked
- ¼ cup thinly sliced red onion
- 1 clove garlic, minced
- 2 Tbsp pitted kalamata olives, cut in half
- ¾ tsp dried crushed rosemary
- ¼ tsp crushed red pepper
- 3 Tbsp olive oil
- 1 Tbsp red wine vinegar
Instructions
- Place eggs in a single layer in a medium saucepan. Add water to cover, and bring to a boil.
- Remove from heat; let stand, covered, 15 minutes. Drain. Run cold water over eggs, and peel. Chop eggs.
- Combine eggs, tuna, onion, garlic, olives, rosemary, and pepper in a large bowl.
- Whisk together oil and vinegar; drizzle over tuna mix, and toss.
