Tuscan Tuna Salad

Ingredients

  • 2 large eggs
  • 1 (12-oz) can albacore tuna in oil, drained and flaked
  • ¼ cup thinly sliced red onion
  • 1 clove garlic, minced
  • 2 Tbsp pitted kalamata olives, cut in half
  • ¾ tsp dried crushed rosemary
  • ¼ tsp crushed red pepper
  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar

Instructions

  1. Place eggs in a single layer in a medium saucepan. Add water to cover, and bring to a boil.
  2. Remove from heat; let stand, covered, 15 minutes. Drain. Run cold water over eggs, and peel. Chop eggs.
  3. Combine eggs, tuna, onion, garlic, olives, rosemary, and pepper in a large bowl.
  4. Whisk together oil and vinegar; drizzle over tuna mix, and toss.
