Sloppy Joe Baked Potatoes
Italian Green Beans
Ingredients
- 2 lb ground beef
- 1 green bell pepper, chopped
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 (8-oz) can tomato sauce
- ¾ cup ketchup
- 3 Tbsp brown sugar
- 3 Tbsp chili powder
- 1 tsp salt
- ½ tsp pepper
- 6 russet potatoes
- ⅓ cup butter, cut into pieces
- ½ cup sour cream
Instructions
- Cook beef, bell pepper, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain well.
- Transfer to a 5-or 6-quart slow cooker. Add tomato sauce, ketchup, brown sugar, chili powder, salt, and pepper, stirring to combine. Cover and cook on LOW 6 to 8 hours. Reserve 3 cups meat mixture for Sloppy Joe Pizza recipe.
- Preheat oven to 400°F. Prick and wrap potatoes in foil, and bake 1 to 1½ hours or until tender.
- Split potatoes, and fluff with a fork. Add butter and sour cream to each potato; season with salt and pepper to taste.
- Serve remaining meat mixture on potatoes.

- 1 (16-oz) pkg frozen cut green beans (or use fresh green beans)
- ½ tsp onion powder
- ½ tsp Italian seasoning
- 1 Tbsp olive oil
- 1 clove garlic, minced
- 1 Tbsp freshly grated Parmesan cheese
Side Dish Instructions
- Cook green beans, onion powder, and seasoning in hot oil in a large skillet over medium-high heat, stirring often, 8 minutes or until green beans are almost tender. Add garlic and cheese; cook 2 minutes.
- Season with salt and pepper to taste.
