Sloppy Joe Baked Potatoes

Ingredients

  • 2 lb ground beef
  • 1 green bell pepper, chopped
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (8-oz) can tomato sauce
  • ¾ cup ketchup
  • 3 Tbsp brown sugar
  • 3 Tbsp chili powder
  • 1 tsp salt
  • ½ tsp pepper
  • 6 russet potatoes
  • ⅓ cup butter, cut into pieces
  • ½ cup sour cream

Instructions

  1. Cook beef, bell pepper, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain well.
  2.  Transfer to a 5-or 6-quart slow cooker. Add tomato sauce, ketchup, brown sugar, chili powder, salt, and pepper, stirring to combine. Cover and cook on LOW 6 to 8 hours. Reserve 3 cups meat mixture for Sloppy Joe Pizza recipe.
  3. Preheat oven to 400°F. Prick and wrap potatoes in foil, and bake 1 to 1½ hours or until tender.
  4. Split potatoes, and fluff with a fork. Add butter and sour cream to each potato; season with salt and pepper to taste.
  5. Serve remaining meat mixture on potatoes.

Side Dish Ingredients

  • 1 (16-oz) pkg frozen cut green beans (or use fresh green beans)
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 Tbsp freshly grated Parmesan cheese

Side Dish Instructions

  1. Cook green beans, onion powder, and seasoning in hot oil in a large skillet over medium-high heat, stirring often, 8 minutes or until green beans are almost tender. Add garlic and cheese; cook 2 minutes.
  2. Season with salt and pepper to taste.
