Mini Veggie Pizzas
Strawberry-Mint LemonadeIngredients
- 1 large zucchini, halved lengthwise
- 1 red bell pepper, halved
- 1 Tbsp olive oil
- 1 cup marinara sauce (such as Rao's)
- 1 (6-count) pkg pita bread rounds (preferably whole wheat)
- 1 (8-oz) block part-skim mozzarella cheese, shredded
- ½ cup thinly sliced red onion
- ½ cup pitted kalamata olives, halved
- ½ cup crumbled feta cheese
- 2 Tbsp chopped fresh basil
Instructions
- Preheat grill to medium-high heat. Toss zucchini and bell pepper with oil; grill, covered, 5 minutes or until tender.
- Cut zucchini in ¼-inch slices and bell pepper into strips.
- Spread marinara sauce on pitas; top with mozzarella, onion, olives, grilled vegetables, and feta.
- Grill, covered, 2 to 3 minutes or until cheese is melted and pitas are crisp. Sprinkle with basil.
Side Dish Ingredients
- 1½ cups hot water
- 1 cup lemon juice
- ⅓ cup honey
- ¼ cup fresh mint leaves
- 1 (16-oz) pkg strawberries, sliced
Side Dish Instructions
- Mix together hot water, lemon juice, and honey, stirring until honey is dissolved.
- Mash together mint leaves and strawberries; add to lemonade. Chill 10 minutes. Pour into ice-filled glasses.
