Strawberry-Mint Lemonade

Ingredients

  • 1 large zucchini, halved lengthwise
  • 1 red bell pepper, halved
  • 1 Tbsp olive oil
  • 1 cup marinara sauce (such as Rao's)
  • 1 (6-count) pkg pita bread rounds (preferably whole wheat)
  • 1 (8-oz) block part-skim mozzarella cheese, shredded
  • ½ cup thinly sliced red onion
  • ½ cup pitted kalamata olives, halved
  • ½ cup crumbled feta cheese
  • 2 Tbsp chopped fresh basil

Instructions

  1. Preheat grill to medium-high heat. Toss zucchini and bell pepper with oil; grill, covered, 5 minutes or until tender.
  2. Cut zucchini in ¼-inch slices and bell pepper into strips.
  3. Spread marinara sauce on pitas; top with mozzarella, onion, olives, grilled vegetables, and feta.
  4. Grill, covered, 2 to 3 minutes or until cheese is melted and pitas are crisp. Sprinkle with basil.

Side Dish Ingredients

  • 1½ cups hot water
  • 1 cup lemon juice
  • ⅓ cup honey
  • ¼ cup fresh mint leaves
  • 1 (16-oz) pkg strawberries, sliced

Side Dish Instructions

  1. Mix together hot water, lemon juice, and honey, stirring until honey is dissolved.
  2. Mash together mint leaves and strawberries; add to lemonade. Chill 10 minutes. Pour into ice-filled glasses.
