Bacon-Wrapped Chicken

Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 tsp smoked paprika (or use other paprika)
  • 1 tsp chili powder
  • 2 slices nitrate-free bacon
  • 2 tsp olive oil
  • 1 Tbsp honey

Instructions

  1. Preheat oven to 375°F. Sprinkle chicken with salt, pepper, paprika, and chili powder.
  2. Wrap 1 slice bacon around each piece of chicken; secure with wooden picks.
  3. Brown chicken in hot oil in a large ovenproof skillet over medium-high heat 2 to 3 minutes per side. Transfer skillet to oven.
  4. Bake 15 minutes or until chicken is done and bacon is crisp; drizzle with honey during last 5 minutes of baking.

Side Dish Ingredients

  • 1 clove garlic, minced
  • ½ cup chopped onion
  • 2 tsp olive oil
  • 1 cup frozen baby lima beans
  • 1 cup frozen whole kernel corn
  • ¼ cup low-sodium chicken broth
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Sauté garlic and onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
  2. Stir in lima beans, corn, broth, salt, and pepper; reduce heat to medium. Cook, covered, 15 minutes or until limas are tender.
