Bacon-Wrapped Chicken

Ingredients
- 2 (6-oz) boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 1 tsp smoked paprika (or use other paprika)
- 1 tsp chili powder
- 2 slices nitrate-free bacon
- 2 tsp olive oil
- 1 Tbsp honey
Instructions
- Preheat oven to 375°F. Sprinkle chicken with salt, pepper, paprika, and chili powder.
- Wrap 1 slice bacon around each piece of chicken; secure with wooden picks.
- Brown chicken in hot oil in a large ovenproof skillet over medium-high heat 2 to 3 minutes per side. Transfer skillet to oven.
- Bake 15 minutes or until chicken is done and bacon is crisp; drizzle with honey during last 5 minutes of baking.

- 1 clove garlic, minced
- ½ cup chopped onion
- 2 tsp olive oil
- 1 cup frozen baby lima beans
- 1 cup frozen whole kernel corn
- ¼ cup low-sodium chicken broth
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Sauté garlic and onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
- Stir in lima beans, corn, broth, salt, and pepper; reduce heat to medium. Cook, covered, 15 minutes or until limas are tender.
