Carne Asada
Roasted Potatoes, Peppers, and Onions
Ingredients
- ½ lb flank steak, trimmed (or use top sirloin)
- 2 cloves garlic, minced
- ½ cup fresh orange juice
- ¼ cup fresh lemon juice
- ¼ cup low-sodium soy sauce
- 1 bunch fresh cilantro, chopped (or use flat-leaf parsley)
- 1 Tbsp chili powder
- 1 Tbsp ground cumin
- ¼ cup olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 avocado, sliced
- ½ cup fresh salsa
Instructions
- Place steak in a large zip-top plastic freezer bag.
- Whisk together garlic and next 7 ingredients; reserve ¼ cup marinade. Pour remaining marinade over steak; seal and chill 8 hours or overnight.
- Remove steak from marinade, discarding marinade; sprinkle with salt and pepper.
- Heat a greased cast-iron skillet or grill pan over medium-high heat; add steak. Cook 6 minutes per side or to desired doneness; let stand 10 minutes before thinly slicing across the grain.
- Serve with reserved ¼ cup marinade, avocado, and salsa.
Side Dish Ingredients
- 1 (8-oz) pkg organic sweet mini peppers, halved
- ½ lb organic new potatoes, cut into wedges
- 1 small red onion, cut into wedges
- 2 Tbsp olive oil
- ½ Tbsp smoked paprika (or use regular paprika)
- ¼ tsp pepper
- ⅛ tsp salt
Side Dish Instructions
- Preheat oven to 425°F. Remove stems and seeds from mini peppers. Combine all ingredients on a rimmed baking sheet.
- Bake 20 minutes or until vegetables are browned and tender.
