Roasted Potatoes, Peppers, and Onions

Ingredients

  • ½ lb flank steak, trimmed (or use top sirloin)
  • 2 cloves garlic, minced
  • ½ cup fresh orange juice
  • ¼ cup fresh lemon juice
  • ¼ cup low-sodium soy sauce
  • 1 bunch fresh cilantro, chopped (or use flat-leaf parsley)
  • 1 Tbsp chili powder
  • 1 Tbsp ground cumin
  • ¼ cup olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 avocado, sliced
  • ½ cup fresh salsa

Instructions

  1. Place steak in a large zip-top plastic freezer bag.
  2. Whisk together garlic and next 7 ingredients; reserve ¼ cup marinade. Pour remaining marinade over steak; seal and chill 8 hours or overnight.
  3. Remove steak from marinade, discarding marinade; sprinkle with salt and pepper.
  4. Heat a greased cast-iron skillet or grill pan over medium-high heat; add steak. Cook 6 minutes per side or to desired doneness; let stand 10 minutes before thinly slicing across the grain.
  5. Serve with reserved ¼ cup marinade, avocado, and salsa.

Side Dish Ingredients

  • 1 (8-oz) pkg organic sweet mini peppers, halved
  • ½ lb organic new potatoes, cut into wedges
  • 1 small red onion, cut into wedges
  • 2 Tbsp olive oil
  • ½ Tbsp smoked paprika (or use regular paprika)
  • ¼ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Preheat oven to 425°F. Remove stems and seeds from mini peppers. Combine all ingredients on a rimmed baking sheet.
  2. Bake 20 minutes or until vegetables are browned and tender.
