Jerk Chicken Kabobs

Ingredients

  • 2 lb boneless, skinless chicken thighs, cut into chunks
  • 2 Tbsp coconut oil (or use olive oil), melted
  • 1½ Tbsp Jerk seasoning
  • ½ tsp salt, divided
  • 2 mangoes, diced
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and minced
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • ¼ tsp pepper

Instructions

  1. Preheat grill to medium-high heat.Toss chicken with oil, Jerk seasoning, and ¼ tsp salt. Thread chicken onto metal or bamboo skewers.
  2. Grill kabobs, covered, 4 to 5 minutes per side or until chicken is done.
  3. Toss together mangoes, bell pepper, jalapeño, cilantro, lime juice, and ¼ tsp each salt and pepper. Serve skewers with salsa.

Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable brown rice
  • 1 (15-oz) can black beans, drained and rinsed
  • ½ chopped red onion
  • 2 Tbsp fresh lime juice
  • 1 tsp Jerk seasoning
  • ¼ tsp salt

Side Dish Instructions

  1. Cook rice according to package directions. Toss together rice, beans, onion, lime juice, seasoning, and salt.
