Jerk Chicken Kabobs
Black Bean RiceIngredients
- 2 lb boneless, skinless chicken thighs, cut into chunks
- 2 Tbsp coconut oil (or use olive oil), melted
- 1½ Tbsp Jerk seasoning
- ½ tsp salt, divided
- 2 mangoes, diced
- 1 red bell pepper, diced
- 1 jalapeño pepper, seeded and minced
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp fresh lime juice
- ¼ tsp pepper
Instructions
- Preheat grill to medium-high heat.Toss chicken with oil, Jerk seasoning, and ¼ tsp salt. Thread chicken onto metal or bamboo skewers.
- Grill kabobs, covered, 4 to 5 minutes per side or until chicken is done.
- Toss together mangoes, bell pepper, jalapeño, cilantro, lime juice, and ¼ tsp each salt and pepper. Serve skewers with salsa.
Side Dish Ingredients
- 1 (8.8-oz) pouch microwavable brown rice
- 1 (15-oz) can black beans, drained and rinsed
- ½ chopped red onion
- 2 Tbsp fresh lime juice
- 1 tsp Jerk seasoning
- ¼ tsp salt
Side Dish Instructions
- Cook rice according to package directions. Toss together rice, beans, onion, lime juice, seasoning, and salt.
