Asian Chicken-Quinoa Salad

Ingredients

  • 1½ cups quinoa
  • ½ tsp salt
  • 1 (8-oz) pkg frozen shelled edamame
  • 1 (16-oz) pkg tricolor coleslaw
  • 2 red bell peppers, chopped
  • 1 (16-oz) pkg mandarin oranges packed in juice, drained
  • 2 cups shredded rotisserie chicken
  • ½ cup sesame-ginger salad dressing
  • ½ cup roasted, salted sunflower kernels

Instructions

  1. Cook quinoa according to package directions, adding salt to cooking water. Cook edamame according to package directions.
  2. Toss together quinoa, edamame, and remaining ingredients in a bowl.
