Asian Chicken-Quinoa Salad

Ingredients
- 1½ cups quinoa
- ½ tsp salt
- 1 (8-oz) pkg frozen shelled edamame
- 1 (16-oz) pkg tricolor coleslaw
- 2 red bell peppers, chopped
- 1 (16-oz) pkg mandarin oranges packed in juice, drained
- 2 cups shredded rotisserie chicken
- ½ cup sesame-ginger salad dressing
- ½ cup roasted, salted sunflower kernels
Instructions
- Cook quinoa according to package directions, adding salt to cooking water. Cook edamame according to package directions.
- Toss together quinoa, edamame, and remaining ingredients in a bowl.
