Chicken Caprese Zoodles

Ingredients
- 2 (16-oz) pkg zucchini noodles
- ¼ cup olive oil, divided
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 1½ lb boneless, skinless chicken breasts, halved lengthwise
- 1 pint grape tomatoes, halved
- 1 (8-oz) ball fresh mozzarella cheese, sliced
- ¼ cup fresh basil leaves
- ¼ cup refrigerated pesto
Instructions
- Combine zucchini noodles, 2 Tbsp oil, and ½ tsp each salt and pepper; let stand 15 minutes.
- Meanwhile, sprinkle chicken with ½ tsp each salt and pepper. Cook, in batches, in 2 Tbsp hot oil in a large cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or until done. Slice chicken crosswise.
- Divide zucchini noodles among plates; top with chicken, tomatoes, cheese, and basil.
- Microwave pesto in a microwavable bowl at HIGH 30 seconds or until thoroughly heated; drizzle over chicken and zucchini noodles.
