Honey-Soy Salmon
Orange Sugar Snap Stir-Fry
Ingredients
- ¾ lb salmon fillets
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp honey
- 1 Tbsp gluten-free soy sauce
- 1½ tsp grated ginger
- 1 (8.5-oz) pouch gluten-free microwavable brown basmati rice
Instructions
- Preheat broiler. Place fish on a greased foil-lined baking sheet; sprinkle with salt and pepper. Broil 5 minutes.
- Combine honey, soy sauce, and ginger; brush half of mixture over fish. Broil 2 to 3 minutes longer or until fish flakes with a fork; drizzle remaining honey mixture over fish.
- Meanwhile, cook rice according to package directions.

- 1 clove garlic, minced
- 1 (12-oz) pkg sugar snap peas
- ½ cup sliced red bell pepper
- 1½ tsp dark sesame oil
- 1 Tbsp gluten-free soy sauce
- ½ tsp orange zest
- 1½ tsp fresh orange juice
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Cook garlic, sugar snap peas, and bell pepper in hot oil in a large nonstick skillet over medium heat 5 minutes or until vegetables are crisp-tender; stir in soy sauce, orange zest, orange juice, and crushed red pepper.
- Cook 1 minute or until thoroughly heated.
