Broccoli and Cashew Stir-Fry

Ingredients

  • 1 Tbsp refrigerated ginger paste
  • 1 clove garlic, minced
  • 1 Tbsp vegetable oil
  • 1 Tbsp sesame oil
  • 1 (12-oz) pkg broccoli florets
  • ½ (8-oz) pkg soba noodles
  • 1 green onion, chopped
  • 1 Tbsp soy sauce (or use tamari)
  • ⅓ cup cashews
  • 1 Tbsp chopped fresh cilantro

Instructions

  1. Sauté ginger and garlic in hot oils in a large nonstick skillet over medium-high heat 1 minute. Stir in broccoli; sauté 8 minutes or until broccoli is tender.
  2. Meanwhile, prepare soba noodles according to package directions. Toss with green onions.
  3. Stir soy sauce and nuts into broccoli mixture. Serve stir-fry over hot noodles; top with cilantro.
