Broccoli and Cashew Stir-Fry

Ingredients
- 1 Tbsp refrigerated ginger paste
- 1 clove garlic, minced
- 1 Tbsp vegetable oil
- 1 Tbsp sesame oil
- 1 (12-oz) pkg broccoli florets
- ½ (8-oz) pkg soba noodles
- 1 green onion, chopped
- 1 Tbsp soy sauce (or use tamari)
- ⅓ cup cashews
- 1 Tbsp chopped fresh cilantro
Instructions
- Sauté ginger and garlic in hot oils in a large nonstick skillet over medium-high heat 1 minute. Stir in broccoli; sauté 8 minutes or until broccoli is tender.
- Meanwhile, prepare soba noodles according to package directions. Toss with green onions.
- Stir soy sauce and nuts into broccoli mixture. Serve stir-fry over hot noodles; top with cilantro.
