Huevos Rancheros

Ingredients
- ⅔ cup refried beans
- ¼ cup fresh salsa, divided
- 2 (0.63-oz) tostada shells (such as Guerrero)
- ½ cup shredded reduced-fat Mexican-blend cheese
- 2 tsp olive oil
- 2 large eggs
- ⅛ tsp pepper
- 1 green onion, sliced
- 1 small avocado, diced
Instructions
- Preheat oven to 350°F. Combine beans and 2 Tbsp salsa. Place tostada shells on a rimmed baking sheet; spread bean mixture on tostadas, and sprinkle with cheese.
- Bake 5 minutes or until shells are golden brown.
- Meanwhile, heat oil in a nonstick skillet over medium-high heat; crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness. Sprinkle with pepper.
- Top tostadas with eggs, 2 Tbsp salsa, onion, and avocado.
