Ingredients

  • ⅔ cup refried beans
  • ¼ cup fresh salsa, divided
  • 2 (0.63-oz) tostada shells (such as Guerrero)
  • ½ cup shredded reduced-fat Mexican-blend cheese
  • 2 tsp olive oil
  • 2 large eggs
  • ⅛ tsp pepper
  • 1 green onion, sliced
  • 1 small avocado, diced

Instructions

  1. Preheat oven to 350°F. Combine beans and 2 Tbsp salsa. Place tostada shells on a rimmed baking sheet; spread bean mixture on tostadas, and sprinkle with cheese.
  2. Bake 5 minutes or until shells are golden brown.
  3. Meanwhile, heat oil in a nonstick skillet over medium-high heat; crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness. Sprinkle with pepper.
  4. Top tostadas with eggs, 2 Tbsp salsa, onion, and avocado.
