Baked Eggs in Grits Cups

Ingredients

  • ½ cup stone-ground grits
  • 1 green onion, chopped
  • 1 Tbsp chopped fresh parsley
  • 4 large eggs
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 425°F. Cook grits according to package directions. Add onion and parsley; stir well.
  2. Spoon grits into 2 (10-oz) ramekins coated with cooking spray.
  3. Make indentations in grits using the back of a spoon; break 2 eggs into each indentation, and sprinkle with salt and pepper.
  4. Place ramekins in a shallow small baking dish. Add water to baking dish to reach halfway up sides of ramekins.
  5. Bake 18 to 20 minutes or until eggs are cooked to desired doneness.

Side Dish Ingredients

  • ½ pint organic grape tomatoes
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • ½ Tbsp honey
  • ½ Tbsp balsamic vinegar
  • 3 (5-oz) pkg organic baby spinach
  • ¼ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Sauté tomatoes in hot oil in a large nonstick skillet over medium-high heat until they begin to burst; add garlic, honey, and vinegar. Cook 1 minute.
  2. Add spinach, a few handfuls at a time, until wilted. Sprinkle with pepper and salt.
