Beef-and-Mushroom Skillet Toss

Ingredients

  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp Worcestershire sauce
  • 8 oz top round beef steak, cut into thin strips
  • 2 tsp sesame oil, divided
  • 1 (8-oz) pkg mushrooms, quartered
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Combine soy sauce and Worcestershire sauce in a bowl.
  2. Cook beef in 1 tsp hot oil in a skillet over medium-high heat 2 to 3 minutes or just until beef begins to brown. Remove from skillet.
  3. Heat 1 tsp oil in skillet; add mushrooms, and cook 4 to 5 minutes or until tender.
  4. Add beef and soy sauce mixture; cook 30 seconds or until slightly thickened. Sprinkle with parsley.

Side Dish Ingredients

  • 1 (8-oz) pkg thin green beans
  • ½ Tbsp olive oil
  • ½ small shallot, minced
  • 1 Tbsp chopped fresh parsley
  • 1 Tbsp butter, softened
  • ½ tsp lemon zest
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss beans with oil in a roasting pan. Bake 6 to 8 minutes.
  2. Meanwhile, stir together shallot, parsley, butter, and lemon zest; toss with hot cooked beans. Sprinkle with salt and pepper.
