Tuna Cakes
Warm White Beans, Spinach, and TomatoesIngredients
- 2 (6-oz) cans wild-caught tuna in water, drained and flaked
- ⅓ cup Italian breadcrumbs (preferably whole wheat)
- 1 large egg, lightly beaten
- ½ Tbsp fresh lemon juice
- ½ Tbsp olive-oil mayonnaise
- 1 tsp dried dill
- 1 Tbsp olive oil
- Lemon wedges (optional)
Instructions
- Gently combine tuna and next 5 ingredients; shape into 6 patties.
- Cook patties in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done.
- Serve with lemon wedges, if desired.
Side Dish Ingredients
- 1 cup halved grape tomatoes
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1 (15-oz) can cannellini beans, drained and rinsed
- 2 Tbsp water
- 1 (5-oz) pkg baby spinach
- 2 Tbsp chopped fresh basil
- ¼ tsp pepper
Side Dish Instructions
- Cook tomatoes and garlic in hot oil in a saucepan over medium heat 3 minutes or until tomatoes begin to soften; add beans and water.
- Bring to a boil; add spinach, in batches. Cook 3 minutes or until spinach is wilted; stir in basil and pepper.
