Thai Pork Tenderloin

Cucumber, Peanut, and Basil Salad

Ingredients

  • 1½ Tbsp fresh lime juice
  • 1 Tbsp rice vinegar
  • 1 Tbsp soy sauce
  • 1 Tbsp dark sesame oil
  • 1 tsp Asian chile garlic paste (such as Sambal Oelek; or use hot sauce)
  • 1 green onion, chopped
  • 1 lb pork tenderloin, trimmed

Instructions

  1. Preheat oven to 400°F. Whisk together lime juice, vinegar, soy sauce, oil, chile paste, and green onion in a bowl. Reserve half of mixture in a second bowl.
  2. Brush one portion of lime juice mixture over pork. Place pork on a lightly greased broiler pan.
  3. Bake 18 to 22 minutes or until a meat thermometer reads 140°F; let stand 10 minutes before slicing. Drizzle pork with reserved sauce.

Side Dish Ingredients

  • ½ (5-oz) pkg baby spinach, chopped 
  • ½ English cucumber, very thinly sliced 
  • ½ (1-oz) pkg fresh basil, thinly sliced 
  • 1 small red chile pepper, halved, seeded, and thinly sliced (see Note)
  • 3 Tbsp roasted, salted peanuts, crushed
  • 1½ tsp fresh lime juice 
  • 1½ tsp soy sauce 
  • 1½ tsp dark sesame oil 

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
