Orange Sugar Snaps and Rice

Ingredients

  • 6 (6-oz) salmon fillets
  • ¼ cup low-sodium soy sauce
  • 2 Tbsp mirin
  • 2 Tbsp dark sesame oil
  • 1 Tbsp honey
  • 1 Tbsp minced garlic
  • 1 Tbsp ginger paste
  • 2 green onions, chopped

Instructions

  1. Preheat broiler. Place fish on a greased foil-lined baking sheet. Whisk together soy sauce, mirin, oil, honey, garlic, and ginger paste. Brush half of soy sauce mixture on fish.
  2. Broil 5 minutes; brush remaining soy sauce mixture on fish. Broil 5 minutes or until fish flakes with a fork. Sprinkle with onions.

  • 1 (16-oz) pkg sugar snap peas
  • 2 (8.5-oz) pouches basmati rice
  • 1 Tbsp dark sesame oil
  • 1 tsp orange zest
  • 1 tsp ginger paste
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook peas and rice according to package directions.
  2. Combine peas, oil, orange zest, ginger paste, salt, and pepper; toss.
