Grilled Smoked Gouda Burgers
Charred Squash SaladIngredients
- 1½ lb lean ground beef
- ¼ tsp salt
- ¼ tsp pepper
- 3 Tbsp Worcestershire sauce, divided
- 1 Tbsp olive oil
- ½ Tbsp hot sauce
- 2 onions, cut into ¼-inch-thick slices
- 1 cup shredded smoked Gouda cheese
- 6 hamburger buns (preferably whole wheat)
- ¼ cup olive-oil mayonnaise
Instructions
- Preheat grill to medium-high heat. Gently combine beef, salt, and pepper; shape into 6 patties.
- Combine 1 Tbsp Worcestershire sauce, oil, and hot sauce. Brush onions with Worcestershire mixture.
- Grill burgers, covered, 4 to 5 minutes per side or until centers are no longer pink, topping with cheese during the last 1 minute of cooking. Grill onions 2 minutes per side or until charred. Grill buns, cut sides down, 1 minute or until toasted.
- Meanwhile, combine mayonnaise and 2 Tbsp Worcestershire sauce.
- Spread cuts sides of buns with mayonnaise mixture. Serve burgers on buns with onions.

- 3 yellow squash, cut into planks
- 1 Tbsp minced garlic
- 3 Tbsp olive oil, divided
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- ½ tsp pepper
- 1 (9-oz) pkg mixed greens
- ¼ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat grill to medium-high heat. Combine squash, garlic, and 1 Tbsp oil; place on a grill rack. Grill, covered, 2 to 3 minutes per side or until well marked on both sides. Coarsely chop.
- Meanwhile, whisk together 2 Tbsp oil, lemon juice, salt, and pepper.
- Gently combine greens, squash, and oil mixture in a large bowl; sprinkle with cheese.
