Sheet Pan Balsamic Chicken Dinner

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • 2 (12-oz) pkg asparagus tips
  • 4 cloves garlic, minced
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (22-oz) pkg frozen red potato wedges with olive oil and garlic (such as Alexia)
  • ½ cup crumbled blue cheese
  • ¼ cup balsamic glaze
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat oven to 425°F. Place 2 large rimmed baking sheets in oven while preheating.
  2. Toss together chicken, asparagus, garlic, 2 Tbsp oil, salt, and pepper; arrange chicken in an even layer on a hot baking sheet. Reserve asparagus.
  3. Toss together potatoes and 1 Tbsp oil; arrange in a single layer on second baking sheet.
  4. Bake chicken and potatoes 15 minutes. Add asparagus to sheet with chicken, and bake 5 to 10 minutes longer or until chicken is done and potatoes are golden. Drizzle with glaze; sprinkle with cheese and basil.
