Oven-Roasted Shrimp and Corn

Ingredients

  • 2 lb peeled and deveined, fresh or frozen (thawed) large shrimp
  • 1 (12-oz) pkg frozen whole kernel corn, thawed
  • 1 pint grape tomatoes
  • 3 Tbsp olive oil
  • 2 Tbsp minced garlic
  • ½ cup white wine
  • ¼ cup chopped fresh parsley
  • 1 Tbsp Old Bay seasoning

Instructions

  1. Preheat oven to 425°F. Toss together shrimp, corn, tomatoes, oil, and garlic on a large rimmed baking sheet.
  2. Add wine, parsley, and Old Bay seasoning; stir. Bake 12 to 15 minutes or until shrimp turn pink.
