Barbecue Pork Shepherd's Pie
Mixed Green Salad with CroutonsIngredients
- 2 (24-oz) pkg refrigerated mashed potatoes
- 1 (8-oz) carton sour cream
- 1 (1-oz) envelope Ranch dressing mix
- 1 (16-oz) container pulled barbecue pork in sauce
- 1 cup barbecue sauce
- 1 (15-oz) can corn, drained
- 1 (15-oz) can pinto beans, drained and rinsed
- 1 cup shredded Cheddar cheese
Instructions
- Preheat oven to 425°F.Heat potatoes according to package directions. Stir in sour cream and dressing mix.
- Heat barbecue according to package directions and spoon into a large ovenproof greased baking dish. Top with sauce, corn, and beans. Spoon mashed potatoes over mixture; sprinkle with cheese. Bake 15 minutes or until hot and bubbly.
Side Dish Ingredients
- 1 (9-oz) pkg mixed salad greens
- 2 tomatoes, chopped
- 1 (6-oz) pkg seasoned croutons
- ½ cup balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl just before serving.
