Barbecue Pork Shepherd's Pie

Ingredients

  • 2 (24-oz) pkg refrigerated mashed potatoes
  • 1 (8-oz) carton sour cream
  • 1 (1-oz) envelope Ranch dressing mix
  • 1 (16-oz) container pulled barbecue pork in sauce
  • 1 cup barbecue sauce
  • 1 (15-oz) can corn, drained
  • 1 (15-oz) can pinto beans, drained and rinsed
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 425°F.Heat potatoes according to package directions. Stir in sour cream and dressing mix.
  2. Heat barbecue according to package directions and spoon into a large ovenproof greased baking dish. Top with sauce, corn, and beans. Spoon mashed potatoes over mixture; sprinkle with cheese. Bake 15 minutes or until hot and bubbly.

Side Dish Ingredients

  • 1 (9-oz) pkg mixed salad greens
  • 2 tomatoes, chopped
  • 1 (6-oz) pkg seasoned croutons
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl just before serving.
