Sticky Orange Chicken
Spicy Roasted Broccoli and Basmati Rice
Ingredients
- 1 (16-oz) pkg frozen gluten-free chicken nuggets (such as Applegate Farms)
- ⅓ cup no-pulp orange juice
- 1½ Tbsp gluten-free soy sauce
- 1½ Tbsp gluten-free sweet red chili sauce (such as Iron Chef)
- 1 Tbsp rice vinegar
- 1 Tbsp honey
- ½ Tbsp cornstarch
- ½ Tbsp ginger paste
Instructions
- Bake chicken according to package directions.
- Meanwhile, whisk together orange juice, soy sauce, chili sauce, vinegar, honey, and cornstarch in a bowl.
- Bring sauce to a boil in a large skillet over medium-high heat; reduce heat, and simmer 2 to 3 minutes or until sauce is thickened.
- Stir in ginger paste and chicken nuggets; toss. Serve over rice.
Side Dish Ingredients
- 1 crown broccoli, cut into florets
- 2 Tbsp olive oil
- ¼ tsp crushed red pepper
- ½ cup long-grain white rice
Side Dish Instructions
- Preheat oven to 400°F. Toss together broccoli, oil, and red pepper on a rimmed baking sheet. Season lightly with salt and pepper.
- Bake 10 minutes or until broccoli is browned and tender.
- Cook rice according to package directions; season with salt and pepper to taste.
