Sticky Orange Chicken

Spicy Roasted Broccoli and Basmati Rice

Ingredients

  • 1 (16-oz) pkg frozen gluten-free chicken nuggets (such as Applegate Farms)
  • ⅓ cup no-pulp orange juice
  • 1½ Tbsp gluten-free soy sauce
  • 1½ Tbsp gluten-free sweet red chili sauce (such as Iron Chef)
  • 1 Tbsp rice vinegar
  • 1 Tbsp honey
  • ½ Tbsp cornstarch
  • ½ Tbsp ginger paste

Instructions

  1. Bake chicken according to package directions.
  2. Meanwhile, whisk together orange juice, soy sauce, chili sauce, vinegar, honey, and cornstarch in a bowl.
  3. Bring sauce to a boil in a large skillet over medium-high heat; reduce heat, and simmer 2 to 3 minutes or until sauce is thickened.
  4. Stir in ginger paste and chicken nuggets; toss. Serve over rice.

Side Dish Ingredients

  • 1 crown broccoli, cut into florets
  • 2 Tbsp olive oil
  • ¼ tsp crushed red pepper
  • ½ cup long-grain white rice

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together broccoli, oil, and red pepper on a rimmed baking sheet. Season lightly with salt and pepper.
  2. Bake 10 minutes or until broccoli is browned and tender.
  3. Cook rice according to package directions; season with salt and pepper to taste.
