Cucumber Ranch Salad with Warm Tortillas
Ingredients
- 8 oz lean ground beef
- ½ (15-oz.) can no-salt-added black beans, drained and rinsed
- ⅓ cup picante sauce
- 2 Tbsp chopped fresh cilantro
- 1 tsp ground cumin
- 1 tsp ketchup
Instructions
- Heat a nonstick skillet over medium-high heat; brown beef. Stir in remaining ingredients; cook 1 to 2 minutes or until heated through.
Side Dish Ingredients
- 2 cups baby spinach
- 2 cups chopped cucumber
- 2 green onions, chopped
- 3 Tbsp light Ranch dressing
- ¼ tsp salt-free steak grilling blend seasoning
- 4 (6-inch) corn tortillas
Side Dish Instructions
- Arrange spinach on 2 salad plates. Toss together cucumber, onion and dressing, and top spinach with equal amounts of the cucumber mixture; sprinkle with steak seasoning.
- Wrap tortillas in a damp paper towel. Microwave on HIGH 30 seconds to 1 minute or until warm.
- Serve salad and tortillas alongside beef.
