Ketchup-Topped Meat Loaf

Ingredients

  •  2 lb ground beef
  • ½ cup panko breadcrumbs
  • ¾ cup ketchup, divided
  • 2 Tbsp Worcestershire sauce
  • 1½ tsp Greek seasoning (such as Cavender's)
  • ¼ cup packed brown sugar
  • 1 Tbsp yellow mustard

Instructions

  1. Preheat oven to 400°F. Gently mix beef, breadcrumbs, ¼ cup ketchup, Worcestershire, and seasoning using your hands. Shape in a loaf, and place in a 9-x 5-inch loaf pan.
  2. Bake 1 hour. Carefully drain off drippings.
  3. Mix ½ cup ketchup, brown sugar, and mustard; spread over meat loaf. Bake 15 minutes longer or until center of loaf is no longer pink. Cool slightly, and slice.

Side Dish Ingredients

  • 2 (12-oz) pkg green beans
  • ¼ cup butter
  • 6 Tbsp soy sauce
  • ¼ cup packed brown sugar
  • ½ tsp pepper
  • 1 (16-oz) pkg bacon
  • 1 (20-oz) pkg refrigerated prepared macaroni and cheese (such as Main St. Bistro)

Side Dish Instructions

  1. Cook beans according to package directions. Cool and separate into bundles of 7 to 8 beans each.
  2. Melt butter in a small saucepan over medium heat. Add soy sauce, brown sugar, and pepper. Bring to a boil; cook until slightly thickened.
  3. Cook bacon, in batches, in a large skillet over medium heat until pliable but not quite crisp. Drain.
  4. Preheat oven to 400°F. Wrap 1 slice bacon around each bean bundle; place bundles, a few inches apart, on a foil-lined rimmed baking sheet. Brush heavily with soy sauce mixture.
  5. Bake 10 to 15 minutes or until bacon is crisp, basting once or twice with remaining soy sauce mixture.
  6. Meanwhile, cook macaroni and cheese according to package directions.
