Homemade Chicken Nuggets

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 Tbsp olive oil
  • ½ cup panko breadcrumbs
  • ½ Tbsp Italian seasoning
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F. Coat a baking sheet with cooking spray.
  2. Place chicken pieces in a bowl. Drizzle with oil; season lightly with salt and pepper, and toss.
  3. Combine breadcrumbs, seasoning, and cheese in a shallow bowl; mix well.
  4. Coat chicken pieces in breadcrumbs; place on prepared baking sheet. Spray tops with cooking spray.
  5. Bake 10 minutes; turn and bake 10 minutes longer or until chicken is done.

Side Dish Ingredients

  • ½ (16-oz) pkg frozen corn
  • 1 Tbsp butter
  • 2 (4-oz) cups unsweetened applesauce, chilled

Side Dish Instructions

  1. Cook corn according to package directions. Add butter; season with salt and pepper to taste.
