Italian Chicken Sausage with Breakfast Greens

Ingredients

  • 1 (12-oz) pkg fully cooked Italian chicken sausage links
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 (16-oz) pkg chopped kale
  • ½ cup low-sodium chicken broth
  • 1 Tbsp pure maple syrup
  • 2 tsp low-sodium soy sauce
  • ¼ to ½ tsp crushed red pepper
  • 2 Tbsp fresh lemon juice
  • 1 pint grape tomatoes, cut in half

Instructions

  1. Cook sausage in hot oil in a Dutch oven over medium-high heat 5 to 6 minutes or until browned and thoroughly heated. Remove, reserving drippings in pan.
  2. Add garlic to hot drippings; cook 1 minute. Add kale, broth, syrup, soy sauce, pepper, and lemon juice.
  3. Cook 5 minutes or until kale is wilted, stirring often. Stir in tomatoes. Serve with sausage.

  • 2 cups seedless red grapes

  1. Serve grapes alongside sausage and greens.
