Turkey Sausage-and-Cheddar Cheese Breakfast Burritos

Ingredients
- ½ lb lean ground turkey sausage
- 2 large eggs
- 2 egg whites
- 4 (0.67-oz) slices reduced-fat Cheddar cheese
- 4 soft taco-size whole wheat tortillas
- ½ cup refrigerated salsa
- 2 Tbsp chopped green onion
Instructions
- Cook sausage in a large nonstick skillet over medium heat 6 minutes or until browned and crumbled. Drain on paper towels, reserving 1 Tbsp drippings in pan.
- Whisk together eggs and egg whites. Cook in hot drippings over medium heat, without stirring, 2 minutes or until beginning to set. Cook, stirring constantly, 2 minutes or until thickened and set.
- Place 1 slice cheese in center of each tortilla. Top with sausage, eggs, salsa, and green onion. Roll up tortillas, tucking in ends. Cut in half before serving.
