Shrimp-Chorizo Street Tacos

Ingredients

  • ¼ lb ground chorizo sausage
  • 1 Tbsp olive oil, divided
  • ¾ lb peeled and deveined, large raw shrimp
  • ½ (16-oz) pkg tricolor coleslaw
  • 2 Tbsp chopped fresh cilantro
  • 3 Tbsp crème fraîche (or use sour cream)
  • 1 Tbsp fresh lime juice
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 12 corn tortillas

Instructions

  1. Cook chorizo in ½ Tbsp hot oil in a large nonstick skillet 6 to 8 minutes or until browned and crumbly. Add shrimp; cook 1 to 2 minutes or until shrimp turn pink.
  2. Meanwhile, combine slaw, cilantro, crème fraîche, lime juice, ½ Tbsp oil, salt, and pepper in a bowl.
  3. Heat tortillas according to package directions. Arrange tortillas in 6 stacks; top with shrimp-chorizo mixture and slaw.
