Jerk Chicken Kabobs
Black Bean RiceIngredients
- 1 lb boneless, skinless chicken thighs, cut into chunks
- 1 Tbsp coconut oil (or use olive oil), melted
- 2 tsp Jerk seasoning
- ¼ tsp salt, divided
- 1 mango, diced
- ½ red bell pepper, diced
- ½ jalapeño pepper, seeded and minced
- 1 Tbsp chopped fresh cilantro
- ½ Tbsp fresh lime juice
- ⅛ tsp pepper
Instructions
- Preheat grill to medium-high heat.Toss chicken with oil, Jerk seasoning, and ⅛ tsp salt. Thread chicken onto metal or bamboo skewers.
- Grill kabobs, covered, 4 to 5 minutes per side or until chicken is done.
- Toss together mango, bell pepper, jalapeño, cilantro, lime juice, and ⅛ tsp each salt and pepper. Serve skewers with salsa.
Side Dish Ingredients
- 1 (4.4-oz) cup microwavable brown rice
- ½ (15-oz) can black beans, drained and rinsed
- ¼ chopped red onion
- 1 Tbsp fresh lime juice
- ½ tsp Jerk seasoning
- ⅛ tsp salt
Side Dish Instructions
- Cook rice according to package directions. Toss together rice, beans, onion, lime juice, seasoning, and salt.
