Crunchy Tuna Salad

Ingredients

  • ⅔ cup olive-oil mayonnaise
  • 1 Tbsp whole-grain mustard
  • 2 tsp lemon juice
  • 1½ tsp chopped fresh dill
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 4 (5-oz) can chunk light tuna in oil, drained
  • 1 (8-oz) pkg tricolor bell pepper mix (such as Incredible Fresh)
  • ¼ cup minced red onion
  • 3 stalks celery, chopped
  • ⅓ cup coarsely chopped celery leaves
  • 12 large Bibb lettuce leaves
  • 2 avocados, sliced

Instructions

  1. Whisk together mayonnaise, mustard, lemon juice, dill, salt, and pepper in a large bowl.
  2. Add tuna to bowl; break up into bite-size chunks. Add bell pepper mix, onion, celery, and celery leaves. Stir to combine.
  3. Stack 2 lettuce leaves for each serving. Top with tuna salad and avocado.
