Crunchy Tuna Salad
Ingredients
- ⅔ cup olive-oil mayonnaise
- 1 Tbsp whole-grain mustard
- 2 tsp lemon juice
- 1½ tsp chopped fresh dill
- ½ tsp kosher salt
- ½ tsp pepper
- 4 (5-oz) can chunk light tuna in oil, drained
- 1 (8-oz) pkg tricolor bell pepper mix (such as Incredible Fresh)
- ¼ cup minced red onion
- 3 stalks celery, chopped
- ⅓ cup coarsely chopped celery leaves
- 12 large Bibb lettuce leaves
- 2 avocados, sliced
Instructions
- Whisk together mayonnaise, mustard, lemon juice, dill, salt, and pepper in a large bowl.
- Add tuna to bowl; break up into bite-size chunks. Add bell pepper mix, onion, celery, and celery leaves. Stir to combine.
- Stack 2 lettuce leaves for each serving. Top with tuna salad and avocado.
