One-Pot Ground Beef Stroganoff

Ingredients

  • 1½ lb ground beef
  • 1 (8-oz) pkg sliced mushrooms
  • 1 cup chopped onion
  • 2 tsp minced garlic
  • 2 Tbsp Dijon mustard
  • ½ cup white wine (or use broth)
  • 3½ cups beef broth
  • 8 oz wide egg noodles
  • 1 (8-oz) carton sour cream

Instructions

  1. Cook beef, mushrooms, onion, and garlic in a large, deep skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Stir in mustard. Add wine, and cook 2 minutes.
  2. Add broth; bring to a boil. Stir in egg noodles; cover and cook, stirring occasionally, 10 to 12 minutes or until noodles are tender. Stir in sour cream. Season with salt and pepper to taste.

Side Dish Ingredients

  • 2 (12-oz) bags steam-in-bag broccoli and cauliflower medley
  • 3 Tbsp olive oil
  • 1 Tbsp minced garlic

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a lightly greased rimmed baking sheet. Lightly season with salt and pepper.
  2. Bake 20 minutes or until browned and tender.
